This Chenin Blanc is produced from 30-40 year old bush vines. The old age of these vines mean the vine produces very low quantities of grapes, but at a very high quality level. This is what leads the wine to be so elegant and complex. The producer uses a 'Natural' approach to the fermentation, and therefore intervenes as little as possible, this method takes 7 months to complete and is done at a very high standard.
