High up in the mountains of the Trentino region in northern Italy sits the vineyards of the Cavit Cooperative. With over 7000 hectares of vineyards and nearly 4500 growers, the cooperative is a major part of the local economy here accounting for over 60% of the total wine production from the region. This Sauvignon Blanc is grown in vineyards on the slopes of two cool valleys, Valle dell'Adige and Valle dei Laghi and goes beautifully with a pasta salad.
