Pinot Grigio ripens really well here thanks to the warm gentle climate. The vines are trained in a classic pergola system so the canopy shelters the grapes from the often-strong summer sun, helping the grapes retain natural acidity. We particularly like the freshness of this wine as the grapes are picked at the right level of ripeness to give a nice, lively texture.
